Before my husband and I started dating college, we used to hang out at my apartment and make homemade sugar cookie dough to add to a carton of vanilla ice cream. Here’s another little secret about our ice cream habits… I often get in trouble, because I like to eat all the yummy bits of cookie dough, caramel, brownie, or whatever extras are mixed in. The hubs gets mad when I turn his cookie dough ice cream into plain vanilla. So, now we just get two!

Creamy Coconut Ice Cream
- Ice Cream Maker
- 2 cans coconut milk
- 1/4 – 1/2 cup pure maple syrup to desired sweetness
- 2 tbsp arrowroot powder
- 1/4 tsp salt
- 2 tsp vanilla
- Add all ingredients in blender, blend on high for about 1 minute until completely combined.
- Transfer blended ingredients to freezing cold ice cream maker, mix until thickened, about 20 minutes.
