Before my husband and I started dating college, we used to hang out at my apartment and make homemade sugar cookie dough to add to a carton of vanilla ice cream. That was more than 15 years ago, and we still love eating ice cream together! In these pictures we layered peanut butter and chocolate chips through our coconut milk ice cream. Here’s another little secret about our ice cream habits… I often get in trouble, because I like to eat all the yummy bits of cookie dough, caramel, brownie, or whatever extras are mixed in. The hubs gets mad when I turn his cookie dough ice cream into plain vanilla. So, now we just get two!

Creamy Coconut Ice Cream

Delicious vegan and gluten free homemade vanilla ice cream

Equipment

  • Ice Cream Maker

Ingredients
  

  • 2 cans coconut milk
  • 1/4 – 1/2 cup pure maple syrup to desired sweetness
  • 2 tbsp arrowroot powder
  • 1/4 tsp salt
  • 2 tsp vanilla

Instructions
 

  • Add all ingredients in blender, blend on high for about 1 minute until completely combined.
  • Transfer blended ingredients to freezing cold ice cream maker, mix until thickened, about 20 minutes.
