Everything in this bowl came from my garden, so exciting! 🥗 Well, everything except the sunflower seeds, but maybe we’ll even be harvesting some of those this year too.🤞I love the feeling of accomplishment when I actually get to eat something that I planted. This harvest brought in Purple Bok Choi, Purple Kale, Aurgula, Orach, Lacinato Kale, Spinach, and a rainbow lettuce mix. The flavor in these greens (and purples) is insane! Who needs salad dressing, right? Well, maybe that’s taking it too far, but this is one seriously tasty bed of leafy veg.
So, what to top this amazing salad with? We don’t buy a lot of salad dressings from the grocery store, most of them are hiding added sugars, harmful oils, preservatives, or “natural flavorings”. What’s a health-minded mama to do? I have a few go to dressing recipes, but this one is easily my husband’s favorite.
I first met it when I was visiting my friend Julie from Hidden Springs Venue. It was amazing! I made a couple of personalizations and tried it out on my family. It was a huge hit. I don’t know how to best describe this dressing, it’s not like anything I’ve ever bought from a shelf. I’ve called it Creamy Garlic & Chive Salad Dressing, but that just doesn’t do it justice. Creamy Garlic & Chive Salad Dressing
- 1 C. Avocado or Olive Oil
- ½ C. Nutritional Yeast Flakes
- ¼ C. Green Onions or chives
- 3-4 Cloves Fresh Garlic
- 2 tbsp Water
- 1 tbsp Lemon Juice
- 1 tsp Tarragon
- ½ tsp Salt
- Blend all ingredients on high in a blender until smooth.
