This vegan caramel sauce is perfect for those sweet indulgent treats that just wouldn’t be the same without a drizzling of sticky, gooey, sweet caramel sauce. What’s even better is that it’s a 3 ingredient treat that even a novice can whip up.
Coconut: Fruit of the gods, (or is it a nut?)
The coconut has gotten a lot of good press in recent years. As a kid, I don’t remember anyone cooking anything with any part of the coconut. When I was in college, I spent a year teaching at a jungle school in Guyana. Those people knew how to use a coconut! Coconuts are a staple in so many parts of the world. It seems like folks in my part of it are just catching on to what so many others already knew, coconuts are awesome. They’re versatile, delicious, affordable, and packed with nutritious health benefits. 15 years ago, I had no idea there was such a thing as coconut oil, coconut flour, coconut sugar, or coconut aminos. I did know about coconut milk and Almond Joy though, so I guess I wasn’t 100% ignorant.

For this recipe, we skip the butter, heavy cream, and refined sugar, and revel in the deliciosity of the coconut. Note: this vegan caramel sauce does not taste like coconut at all, it tastes like caramel, and it’s awesome. Try it drizzled over cinnamon roll hot chocolate or in a caramel apple pie!
How to Make the Caramel Sauce
Are you ready for this? Don’t blink or you’ll miss it.
First, put everything in a saucepan, simmer, and stir occasionally until the sauce caramelizes. It will thicken more as it cools. 30-40 minutes is about right, or until it coats the back of your spoon and looks, smells, and tastes like caramel.
Vegan Caramel Sauce
- 1 14oz Can Coconut Milk
- 1/2 Cup Coconut Sugar
- 1/2 tsp Sea Salt
- 1 tsp Vanilla Optional
- Mix all ingredients, simmer for 30-40 min stirring occassionally.
